Why do we add Garam Masala at the end ???

 Garam Masala is a spice blend.


It is prepared with cinnamon, cardamom, cumin, cloves, coriander and black pepper.


It increases the flavour profile of any dish and it also has digestive benefits.



Why do we add Garam Masala at the end ??



Garam Masala must be added to the dish at the end only. 


If we add Garam Masala early in the recipe, the spice blend gets exposed to high heat for a longer time.


This can lead to the essential oils which make the dish aromatic and tasteful, resulting in a muted overall flavour.


But when we add Garam Masala at the final stage, its aromatic potential and fresh, vibrant taste is preserved.


This trick works very well with vegetarian dishes.


In some meat based dishes, Garam Masala is added little earlier in the cooking process.
