We all make idlis in our house as morning breakfast . To prepare the idli batter , we soak urad dal and rice in water and together we grind them.
After this , we keep the batter for fermentation for a fortnight . Now comes my topic of discussion .
What causes fermentation?
BACTERIA .
This much everyone knows . But from where did these bacteria come ? We have kept closed the lid of the vessel of batter throughout the night . So no question of atmospheric influence .
Then from where did these bacteria come ? We ourselves didn't add these bacteria !!!
These bacteria came from urad dal , we have used to prepare the batter . When we soaked urad dal in water , they got activated .
All bacteria are not harmful . Idli batter bacteria is one of them . Our small intestine itself is the harbour of many good bacteria which help in digestion of food .
Hence we must be thankful for bacteria for the fluffy and tasty idlis .
